I tried a new kind of pizza today. It's called pinsa, and it's an ancient Roman recipe that uses soy and rice flour in addition to wheat flour for the dough. It's light, airy, slightly crispy, and chewy. It's also rectangular and delicious. This one's from @pizzicata_pizzeria_ristorante which is the only place I know of that serves this kind of pizza.
