Who doesn't love the thought of banana pancakes? While I love bananas, usually banana pancakes have a mushy texture that never really firms up. Add butter or syrup on top of that and I feel like you just have a soggy mess. I saw this recipe and I thought hmmmmm, taters....then thought, what the hell, you like all these ingredients. I cheated, kind of, I used a pre-made Whole Wheat crust we get at Whole Foods.
